MBP 2012 user here. Both Catalina and Mojave will be similar to High Sierra on your system so no need to worry. That being sad, I'd consider upgrading to Mojave only, because Catalina doesn't support 32 bit apps. Be aware that if you manage to do the downgrade itself, there will be trouble afterwards. Apple applications like Mail etc will have been upgraded with Catalina, and subsequently have upgraded/altered their data/settings if you opened them on Catalina, changes that the earlier versions of those applications, which will be reinstalled with High Sierra, cannot know about and therefore cannot parse. How to downgrade from APFS to HFS+. It may be a little more complicated if you are reverting from Catalina, Mojave or High Sierra to a version of the macOS that predates them because Apple.

I updated my MacBook Pro to Catalina, but now certain plugins in my music software do not work. I want to revert back to what I had before (I believe it’s high Sierra). So I tried to restore from a previous backup in time machine, but got the following:
“the system can’t be restored onto this disk because HFS systems can’t be restored to space sharing APFS volumes. ReInstall macOS on this disk and then use Migration Assistant to transfer data from your backup instead.”
does anyone know what this means, and how I could do get back to high Sierra?

Make a backup

Get connected
It takes time to download and install macOS, so make sure that you have a reliable Internet connection. If you're using a Mac notebook computer, plug it into AC power.
Download macOS Catalina
If you're using macOS Mojave, get macOS Catalina via Software Update: Choose Apple menu > System Preferences, then click Software Update.

Begin installation
After downloading, the installer opens automatically.
Click Continue and follow the onscreen instructions. You might find it easiest to begin installation in the evening so that it can complete overnight, if needed.
If the installer asks for permission to install a helper tool, enter the administrator name and password that you use to log in to your Mac, then click Add Helper.
Allow installation to complete
Please allow installation to complete without putting your Mac to sleep or closing its lid. Your Mac might restart, show a progress bar, or show a blank screen several times as it installs both macOS and related updates to your Mac firmware.
